A hit in the Machane Yehuda market is the tea infusion, a blend of candied fruits for tea. Put two heaping tablespoons in a glass of boiling water. Three minutes later, the whole room smells like an Israeli kibbutz. I like to pour two cups of boiling water on a cup of this mix. Put it in a nice jar and let it cool. When cold, fill with ice and serve. Great for a summer day.
Another great use: sprinkle on a green salad or add to a Ceviche plate. magnificent!
This is my favorite tea infusion: lemon, lime, kiwi, mint and papaya. Fresh, sour and pleases the palate. The best way to use it: make iced tea and add tequila. Like a Mediterranean margarita.
