The most popular local spice mixture. The bulk of the mixture contains of common moss (Origanum syriacum, sometimes referred to as "hyssop"). In addition, the mix contains Sumac and roasted sesame seeds.

In Acre and Nazareth, it is believed that the spice develops and improves the brain and strengthens the body, so they make sure to give the children Za'atar before they go to school.

In folk medicine, Za'atar helps cure sore throats, colds, bloating and abdominal pain. Maimonides also wrote about Za'atar as having many healing qualities: disinfecting and vaccinating the body, relieving headaches, strengthening memory and manhood.

In the kitchen we use Za'atar a lot. It flatters vegetables, fish, chicken, cheeses, salads, breads and more.
